

Finger Lime

A large evergreen tree growing to 30-40 m tall (less in cultivation) with a trunk up to 1.5 m diameter. This tree is a common rainforest species endemic to the east coast of Australia. Its juicy, pulpy fruits have a grape-like texture and sweetish, mild pine flavour that is enhanced by cooking. They are popular in sauces, preserves, muffins, and compotes.
